The Limfjord boasts of some of the finest shellfish in Europe, both highly valued by chefs and gourmandes alike. For many years these fine products have primarily been exported to the South of Europe and sold here in selected fine restaurants and quality fish shops in larger cities. Recently however, the shellfish is increasingly being appreciated here closer to home along the shores of the Limfjord.

Oyster & Mussel Premiere 2025

10.-11. october
It is a day of celebration on Mors, when the seasonal oyster and mussel fishery begins, and when the first oyster boats dock in the harbour. Limfjord Oysters are some of the best in the world. The Shellfish Capital of Denmark, Nykøbing Mors, still has an active fishing fleet and this is home of the main processing industry in Denmark and the Danish Shellfish Centre. Experience gourmet chefs, enjoy taste sensations, and observe the Danish Championships in Champagne Sabering, Oyster Opening, and not least the Danish Championships in Oyster Gastronomy.

The history

The shellfish of the Limfjord - 55 million years provenance
Long before humans, there were shellfish. In 1850 the commercial fishery for oysters in the Limfjord started. In the 1900´ the Limfjord- Oyster Company began to turn a significant profit from the harbour in Nykøbing. This created the foundation for the oyster fishery and related industry that we know today.
